Paneer - 1 kg Yellow chilli powder - 10 gm Fresh cream - 125 gm Besan - 25 gm Ginger - garlic paste- 5 gm Ajwain - 3 gm Salt - 1 teaspoon ( or to taste )
Method
Cut paneer into 2" cubes of 50 gm. each.
Dust paneer with half of yellow chilli powder and sprinkle salt and rub.
Make a marinade of cream, besan, ginger garlic paste, salt to taste, yellow chilli powder and ajwain.
Coat the paneer with the marinade and arrange in a tray.
Store in a cool place till cream sets.
Skewer and cook on the grill till golden color. Serve with salad and mint chutney.
Paneer Tikka ( with curd and lemon juice )
Ingredients
Paneer - 500 gms Salt - 3/4 teaspoon ( or to taste ) Garam masala powder - 5 gm Red chilli paste- 8 gms Kasoori methi powder - 4 gm Ginger-garlic paste -10 gms Beaten hung curd - 30 ml Lemon juice - 3 ml
Method
Dice the paneer and marinate with the above mentioned ingredients. After half an hour cook in tandoor or grill on tawa or cook in OTG. Serve hot with mint chutney.
Cut paneer, tomato, onion, capsicum into 1-1/2" cubes. Paneer should have a thickness of ½". Make a marinade by mixing all the rest of the ingredients ( except mustard oil ). Use thin sheekh for the kebab to be broiled in tandoor. Cook in tandoor till done, baste in between with mustard oil. Sprinkle chaat masala on top. Serve hot with mint chutney.
