It's been a long week. I've had pneumonia, I've still been running about pretending as though I didn't have pneumonia, rain has been descending relentlessly, and the cats have been depositing hairballs on the carpet with increased vigor. The best cure for a long week such as this (in addition to massive doses of antibiotics), was undoubtedly having my amazing friend (who also lives next door, in the most beautifully fateful housing arrangement) phone and ask if I would like her to drop by and bring dinner. Like magic, my week was transformed... For, as much as I love to cook, there is something so soothing about the unexpected balm of having a friend prepare supper for you... especially when supper includes The Most Delicious and Inventive Salad... for Pam is one of those remarkable people I am blessed to know who actually do drop by on a Wednesday night, breeze into your kitchen, and say "oh, you know, I just thought I'd whip up a little margarita salad..." Glamorous, all the way.
Pam's Margarita Salad
1/2 cup olive oil 1/4 cup key lime juice 3 T honey 1 rounded tsp cumin 2 T minced fresh cilantro 1 tsp salt Mixed spring greens Diced carrots Diced radish Diced jicama
~ Whisk together the olive oil, lime juice, honey, cumin, cilantro, and salt, to make the dressing. ~ To assemble the salad, toss together the spring greens, carrots, radish, and jicama with some of the dressing. Serve immediately!
