Overnight Oats

As a child, I remember thinking "why would anyone put whiskey in their water" while listening to Three Dog Night's Mama Told Me Not to Come . Then, I grew up, and figured out why people put whiskey in their water...

The same can be said about oatmeal. As a child, I remember my Grandma's bland mushy oats cooked on the stove. The same thought came to mind--"why would anyone eat oatmeal?" Then, I grew up (sort of) and learned why oatmeal is the best breakfast in the world! Seriously. I. love. oatmeal. And you would too--if you gave it a shot. I started with the simple cinnamon, baked apples, plain oatmeal mix about 1 year ago. I didn't like it at first, but it's a cheap, easy and warm breakfast perfect for winter mornings so I stuck with it, and can't get enough oatmeal now. These days, I put everything in my oatmeal... everything. I am planning an entire series of posts dedicated to oatmeal- why it's so wonderful, and the many, many toppings I have included in my daily dose of oats--coming soon!

For now, I will leave you my latest oats... Overnight Oats! These are perfect for summer mornings because they are cold. Hey, don't knock it til ya try it:) I like to have overnight oats when I have a little bit of peanut butter left in the jar (so my oats soak up the rest of the peanut butter that my spoon leaves behind)---so grab an almost empty PB jar and let's get to work!

Mix in a jar1/3 C raw oats (I prefer old fashioned over quick oats)
1/3 C yogurt
1/2 milk (soy, almond, cow's milk--whatev)



Let sit in the fridge overnight. If you are using just a regular jar instead of a PB jar, I like to add a tablespoon of peanut butter. It gives the oats the perfect consistency!

In the morning, I like to add flax seeds or any other ingredients that I find appetizing, but don't want to let sit all night.

On a side note, my friend Lauren introduced me to Peanut Butter & Co peanut butter . If you haven't tried this White Chocolate Wonderful go get some. Now! Or get some Cinnamon Raisin Swirl, or even Dark Chocolate Dreams...Would you believe it if I told you the calories are pretty much the same as plain peanut butter? They are all delicious! It's the perfect snack that can tame even the wildest sweet tooth while delivering the protein rich goodness of peanut butter! I got mine at Wal Mart, so any store should have it.
My friend's mom used to make us Marshmallow cream and peanut butter sandwiches (yum). I can only imagine how good that would be using White Chocolate Wonderful:)

They are all dietitians, so they know their oats!
