Overnight chia oats with apple cinnamon puree and strawberry compote: vegan, dairy free, gluten free

I was looking through my blog this week and realised I haven’t shared with you guys enough breakfast recipes yet, so these overnight chia oats with apple cinnamon puree and strawberry compote is is the first of many delicious dishes to help you start your day the right way.
Breakfast always used to be my favourite meal of the day but now it’s the meal I often find the trickiest as most common breakfast foods either are really not healthy or contain dairy. Don’t get me wrong, I always love my juices, but I find I so often resort to drinking them with a couple of slices of toast with avocado and tomato. And as great as avocado is, and I really do think it’s great, I think it’s important to spice up your routine once in a while and these oats are an awesome way to do that.
One of my favourite things about oats is that they keep you full for hours as they’re loaded with fibre and they taste great with almost anything.
In this pot of deliciousness I mixed them with almond milk to ensure that they softened beautifully overnight, as well as pureed apple, cinnamon, vanilla and agave. The apple served to replace the traditional use of yoghurt, to ensure that each little bite was so wonderfully thick and creamy. It’s amazing, it works just as well, if not better as the apple really makes the flavour so much more delicious than yoghurt ever could! The thing that really brings the whole dish together though is the simple strawberry compote, which forms two light layer of sweetness in the middle of the apple oats, making them even more sweet and creamy. The chia seeds are added for their health benefit, as they have no noticeable flavour, but they do absolute wonders for your body. They’re really like little pieces of health. Packed with insane amounts of omega-3, which isn’t always an easy thing to get, as well a huge amount of anti-oxidants, magnesium, fibre and more calcium than whole milk. Oh and not to mention they’re one of nature’s best plant-based sources of complete protein!
Of course you’ll also be getting an abundance of goodness from the apples, strawberries, oats and almond milk, meaning that you really do start your day on the right track and you’ll be happily full thanks to all the fibre, which means you won’t be tempted to stay towards unhealthy snacks.
I know this sounds a little fancy for a quick before work or school breakfast, but the beauty of the dish is that you can pre-make a few and just leave them in your fridge until you’re ready to go. I often make 3 or 4 on a sunday night to ensure I always have a good supply of healthy breakfast deliciousness to last me through the week, plus they make a great afternoon snack or post-dinner treat. It only takes 15 minutes to whip a few up, and trust me you will really thank yourself in the morning!
Makes 2 glasses
For the apple oats:
- 1 cup of gluten free oats
- 1 cup of almond milk
- 2 red apples
- 5 teaspoons of chia seeds
- 3 teaspoons of raw agave syrup
- 1 heaped teaspoon of cinnamon
- 1 teaspoon of vanilla bean extract
For the Strawberry compote:
- just one cup of strawberries
- a handful of almonds to sprinkle on the top for crunch
- a couple of chopped strawberries
Start by peeling and coring the apples, then cut them into small chunks and boil for 5-10 minutes, until they become nice and soft.
While the apples soften, place the strawberries (with the green part removed) into the food processor and blend for one minute until they turn into a smooths strawberry soup! Keep this to one side.
Place the oats, chia seeds, almond milk, vanilla, agave and cinnamon into a bowl and stir together.
Once the the apples are cooked, drain them before mashing them with a fork, until they’re smooth but not liquid. Then mix this into the oats.
Place a quarter of the oats into a glass, add a layer of strawberry compote, another layer of oats and finally another layer of strawberries. If you want you can then add a few pieces of chopped strawberries and almonds as a topping. Then do the same in the next glass.
Leave the oats in the fridge until you’re ready to eat them, they’ll take at least 4 hours to soften down but taste best after about 8, so overnight. Enjoy, this will transform breakfast time!
