Oven-fried chicken with almonds

Preparation time- 20 minutes
Baking time- about 20 minutes
Serves- 4-6

Ingredients

850 skinless, boneless chicken breasts, pounded to 1/2- inch thickness and cut into 12 pieces

1 cup wholewheat breadcrumbs

1/4 cup grated cheese

1/4 cup chopped almonds

2 tablespoon chopped parsley leaves

1 garlic clove, crushed

1 teaspoon salt

1/4 teaspoon dried thyme

A pinch of black pepper

1/4 cup extra virgin olive oil

Method

Preheat oven to 4 00 * F ( 200* C).

Combine bread crumbs, cheese, almonds, parsley , garlic, salt, thyme and pepper. Pour into pie plate.

Dip chicken in oil, then in bread crumb mix to coat and place on baking sheet. Bake 20 minutes ( Do not turn chicken over ).

Arrange chicken on warm plate and serve.
