Oatmeal Nut Butter Cookies with “Chocolate” Chips and Almonds

Last night, I was watching the series finale of “Lost” when I thought to myself, “Boy, I really ought to update my blog.”
(Seriously, though, can we take a minute to discuss how terrible and pointless that was? I feel like I’ve wasted six years, plus 2.5 hours of my life to watch a yellow lab run through the jungle. Yes. Vincent the dog was the highlight of the experience for me.)
Since I’m already quite fond of peanut butter, I’m thrilled to have found this slightly healthier alternative: 5g of protein and 3g of dietary fiber in two tablespoons. The most fun to be had, however, is browsing the “ Recipe Book ” section of Once Again’s site, where I discovered these delicious and hearty cookies that are also, I might add, absurdly easy to prepare.
1 cup White Whole Wheat Flour
1/3 cup Sunflower Nut Butter
1/2 cup honey
1/2 cup sucanat
1 cup quick cooking rolled oats
1/3 cup fat-free plain soy milk
2 Tbsp unsweetened applesauce
1 tsp vanilla extract
1/2 tsp sea salt
1/2 tsp baking soda
1/2 cup Tropical Source Semi-Sweet Chocolate Chips
1/2 cup almonds
Preheat oven to 425ºF.
Combine the first ten ingredients into a thick batter. Add the chocolate chips and almonds, mixing well.
Drop heaping tablespoons onto a greased cookie sheet…
…and bake for 8 minutes. Allow cookies to cool on a wire rack.
