INGREDIENTS
MILKMAID Sweetened Condensed Milk -1 tin (400 g)
NESTLÉ Milk-2 cups (300 ml)
NESTLÉ Milk Chocolate -2 (50 g)
Gelatine -2½ tbsp (20g)
Water -½ cup (75 ml)
Cocoa -4 tbsp (16g)
Walnuts (chopped) -½ cup (50g)
Fresh Cream -1+ 1/3 cup (200 ml)
METHOD
1. Prepare a few NESTLÉ Milk Chocolate curls for decorating. Keep cool. Break the rest of chocolate into bits.
2. Whip the cream over ice till light and fluffy (soft peak stage) and keep chilled.
3. Add cocoa to 2 cups of NESTLÉ Milk. Heat over a pan of hot water while stirring and make a smooth paste.
4. Dissolve gelatine in ½ cup water over a pan of hot water.
5. Add cocoa paste and MILKMAID to the dissolved gelatine. Mix well.
6. Fold in the chilled whipped cream (save 2 tbsp. cream for decoration), add the walnuts and chocolate to the Milkmaid mixture. Mix well.
7. Pour the mixture into a wet soufflé dish/cup and chill.
8. Serve decorated with whipped cream and chocolate curls.
TIP
1. Direct heating of cocoa powder over flame should be avoided as direct heating can lead to burning of cocoa paste.
2. Keep gelatine soaked in water for about 10 minutes before heating. This will help in quick melting of gelatine and will also give a smooth and even consistency of melted gelatine.
