Hello Peeps! Saturday morning....it is!...it is!.....I love a lazy comforting morning....wanted to make waffles for brekkie, but no ingredients to make them so we had a green smoothie instead. I have been wanting to do this post for some time....so I guess the time is now.....te he! Do you remember when I did a review on Nava Atlas's book....Vegan Express? Well if you didn't go here . I decided to make 'Seitan and Polenta Skillet with Fresh Greens'...I did mix it up a bit, but it still was so fabulous....great recipe Nava!....she is so creative and her books are so much fun to even just sit down and read. Go here for Nava's Amazon page.....go ahead and check out some of her books and see what I am talking about for yourself. This is what the book looks like: Yum! Yumm!..... Close-up.....(you know I like them!) In the skillet...... Now for the recipe! The changes I made were: I used mush in place of the polenta, because the store I went to didn't have any....ugh!, instead of the seitan, I used Smart Sausages Italian-style, and I omitted the scallions and bok choy and bought a bag of frozen oriental stir-fry and I used the sun-dried tomatoes....scrumptious!...loved this dish! So simple, but yet elegant for company. The sun is shining today, so we will need our sunglasses...he he!......yea! xoxo Pam |
