Nagpur is famous for fresh pulpy oranges. It’s exported all over the world. In Nagpur you’ll see rows of sweetmeat shops displaying orange - based sweets. There’s orange fudge, orange laddus, orange barfi, and a number of other orange delicacies.
Here’s the recipe of SantraBarfi ( Orange Barfi )
2 oranges, deseeded 1/2 cup ghee 1 cup flour 1 cup milk 1 1/2 cups milk A handful of dry fruits
Mash the oranges to a pulp. Keep aside.
Heat ghee in a pan. Add flour to it and fry till golden brown, stirring at regular intervals.
In a separate pan, heat the milk. Once it starts boiling, add sugar and orange pulp to it and stir for some more time on a low heat.
Then add the flour mixture and stir well. Add the dry fruits and let it cook till the ghee leaves the sides of the pan.
Grease a vessel / thali. Spread the orange mixture in it and allow it to cool naturally. You can cut it into any shape and serve.
