My Halloween Tradition: Pumpkin Cupcakes with Cream Cheese Frosting

I have a confession to make.  I do not particularly enjoy carving pumpkins.  Every year, when Halloween rolls around, everyone around me gets super excited about carving pumpkins.  That’s fine, but it’s not my thing.

I do, however, have a tradition.  Every year I make pumpkin cupcakes with cream cheese frosting.  They are wonderful.

My tradition begun on Halloween of my sophomore year of college, when I had my friends over for a pumpkin painting party on the way-too-small porch of my then apartment.  These cupcakes were a big hit at the party, and the tradition stuck.

I am posting this quickly, as we are leaving soon for Halloween festivities in Nevada City.  Since I only have a little time, I will leave you with a recipe link and a ton of pictures!! Enjoy :)

Pumpkin Cupcakes (via Martha Stewart):
Cream Cheese Frosting:  1 block cream cheese, ~1/2 cup shortening, lots of powdered sugar (3 to 4 cups? Until you reach a good texture)

Dry ingredients.  Lovely spices–ginger, cinnamon, allspice, mace.

Whisking the wet ingredients.  We added some vanilla extract to the recipe.

Plop. Pumpkin time.

Pipe, pipe, pipe.

They’re not done until they’re decorated!

Ta-da! Delicious, delicious pumpkin cupcakes.

As always, these cupcakes were a big hit!
