My First Pinterest Recipe & Weekend Recap!…

Hi there!  Happy Monday to you!  I feel like this weekend just flew right by.  I blinked and before I knew it, it was over.  My weekend wasn’t all that exciting.  How was yours?  What did you do this weekend?  Before I recap my weekend, on Thursday I tried a recipe for dinner that I pinned on Pinterest.  I am seriously obsessed with that website now.  I don’t know why it took me so long to join but I’m glad that I did.  I am finding so many amazing things on that site and it keeps me occupied forever!  I came across a recipe for Butternut Squash Stuffed Shells that sounded amazing.  I knew that I had to try it because lately, I’ve been loving butternut squash.  It’s one of my favorite fall vegetables.


Butternut Squash Stuffed Shells with Sage Lemon Brown Butter Sauce from Proud Italian Cook


2 cups butternut squash

12-15 jumbo pasta shells

2 cups of cottage cheese or you can use ricotta cheese

1/3 cup Parmesan cheese

1 garlic clove

1/4 cup of frozen chopped spinach, drained

1 egg

1 stick of butter

10 sage leaves



Grated lemon peel


Roast the butternut squash in the oven at 425 degrees for 15-20 minutes.

Cook the jumbo pasta shells according to the directions on the box.

In a bowl add cottage cheese or ricotta cheese,  parmesan cheese, garlic clove, spinach, egg, salt, pepper, roasted squash,  and grated lemon peel.

Stuff the shells with the mixture and place in a baking dish sprayed with cooking spray.

Make the sage brown butter sauce by melting 1 stick of butter in a saute pan until golden brown and bubbly.

Add at least 10 sage leaves until slightly crisp.  Turn off heat and squeeze in fresh lemon juice.

Place the shells in a 400 degree oven until heated through around 20-25 minutes. When finished spoon the warm sage sauce all over and sprinkle with grated parmesan.

I was nervous about making these stuffed shells because I’ve never had stuffed shells without having marinara sauce on top and I don’t think Mike has ever had stuffed shells.  Luckily, we both LOVED this dinner!  Mike couldn’t stop talking about how much he enjoyed it and I really liked it too.  We both brought our leftovers to work for lunch the next day.  I was happy that Pinterest allowed me to find such a delicious recipe!  I really liked the Sage Brown Butter Sauce!  It tastes just like the sauce on the Sweet Potato Gnocchi from Trader Joe’s.  Have you ever made a recipe from Pinterest?

So that was the recipe that I wanted to share, now I’ll get back to the weekend.  On Friday night after work, I went to Melissa and my mom’s house to hang out.  We decided to take out Chinese food from a place that we used to take food out from when we were younger.  I don’t know why we stopped taking food out from there.  It’s fantastic!

After dinner, Melissa and I went to Starbucks to get some coffee.  We spent the rest of the night relaxing, watching tv and playing with Oliver.  I had a lot of fun just spending time over there.

On Saturday, I lounged around the house for a while.   I was actually able to sleep in.  I was surprised about that.  Mike and I ran some errands in the afternoon and then Courtney came over to hang out for a while.  When she left, we decided to grab dinner at Bertucci’s.  I didn’t bother taking pictures.  I got Chicken Marsala with roasted potatoes.  It was yummy but my stomach ended up killing me the rest of the evening.

We spent the rest of the night having a Breaking Amish marathon.  I cannot believe we went through the entire season in the course of a few days.  The finale was last night which I think we are going to watch tonight because we dvred it.  It’s crazy how quickly you can get through some of these tv series when you fast forward commercials.  I love it.

Sunday, I was planning on sleeping in but of course the neighbors upstairs had other plans in store.  They were SO obnoxiously loud that I ended up getting up around 7 am.  I wanted to sleep in later especially since I get up every day at 5 am.  I could use the extra sleep.  I was so annoyed!  Then to make matters worse they broke glass all over the driveway which we all share and never bothered to sweep it up.  So nice of them.  Now I’m trying to make sure that I avoid stepping on glass.  So irritating!

Anyway, we went to the supermarket and then I spent the rest of the day relaxing because my stomach once again was not feeling good.  I was glad to just sit and relax.  Sometimes that is just what you need to do.  For dinner, we decided to make Shepard’s Pie with ground turkey.

It’s such a comforting dish!  We spent the rest of the night watching the Eagles lose once again, watching the Amazing Race and Revenge.  Now here we are.  I am off from work tomorrow because I have to go back to the doctor to get the biopsy results.  I’m hoping some progress can be made tomorrow.
