Mushroom & Cheese Frittata!!…

Hi there!  Happy Thursday to you!  I hope your week is a good one.  I’m glad the weekend is nearby.  I’m looking forward to sleeping in on Saturday and Sunday.  I cannot wait for that!  I feel so tired and stressed out.  It will be nice to sleep in.  That is if the people above us can keep it down for a while.  Then I will be able to sleep.

Anyway, yesterday when I was on Twitter .  I noticed something extremely exciting to me!  I got an email that said I had a new follower and I couldn’t believe who it was!


Rocco DiSpirito!!!!  I couldn’t believe my eyes!!  I’m sorry for the iPhone picture but it was the only way that I could share with you.  I couldn’t believe it.  So now I have David Tutera and Rocco following me on Twitter!  That is so exciting to me.  I have always been a huge fan of Rocco’s and I loved when he had his own tv show called, Rocco’s Dinner Party.  I thought it was just so cool that he is now following me.  I think it’s because I entered a contest on his twitter page.  I hope I win!  Does anyone famous follow you?

Let’s move on to something delicious!  Last night, Mike and I decided that we wanted breakfast for dinner since we haven’t had it in a while and my stomach has been acting up.  I wanted to take it easy.  So while he was at work and I was home waiting for him, I thought maybe we should finally try making a frittata!  So that is what we did!  We didn’t follow a recipe.  We just made our own!

Mushroom & Cheese Frittata (Pepperoni on part for Mike)



8 eggs

1/2 cup of Almond Milk

1 tablespoon Olive Oil

6 or 7 button mushrooms cut into slices

Shredded Pepper Jack Cheese

1/2 teaspoon of salt

1/4 teaspoon of pepper


Preheat the oven to 350 degrees.  Whisk eggs and milk in a bowl and set aside.  Heat olive oil in a cast iron skillet and then add mushrooms and season with salt and pepper.  Cook the mushrooms until they are brown.  Once the mushrooms are brown, add the eggs.  Let the eggs cook for 4 minutes on the stove top.

Then add the shredded cheese on top or you can wait until it’s in the oven and then take it out and place the cheese on top.  It’s up to you.  Place the cast iron skillet in the oven and let cook for 10-15 minutes.  Enjoy!

We served our frittata with some roasted potatoes, banana bread Thomas English Muffin, and veggie bacon.

The frittata came out amazing!!  I really loved it a lot and so did Mike.  We had never made a frittata before so it was learning as we went but it really worked out for the best.  It was cooked completely and the pepper jack cheese gave it a nice flavor.  I think I should have waited and added some cheese to the top but next time I will.  Mike wanted some pepperoni so I put it just on part of the frittata so I didn’t need to eat it.  Feel free to add any type of veggies that you’d like.  It’s really a quick and easy dinner to make.

I liked the veggie bacon too. It was my first time trying it and I would definitely get it again!  I hate the flavor of bacon and this one tasted more like turkey bacon which I can tolerate.  I’d prefer to eat veggie bacon because I think it’s a healthier option.
