I have no idea how to make authentic Huevos Rancheros, but for some reason, my idea of Huevos Rancheros seemed to fit the ingredients in my pantry tonight.
I searched my favorite blogs and found enough recipes to adapt one to fit the ingredients I had on hand, and went to work.
This adventure turned out to be over my 400 calorie limit for a meal. Still, at 500 calories, low in fat and high in fiber, it’s a terrific choice for a quick dinner.
2 large eggs 2 large egg whites ½ cup red onion, finely chopped ½ cup bell pepper, finely chopped 1 clove garlic, minced 1 can diced tomatoes, Ro Tel Lime and Cilantro, Drained ½ cup black beans, drained 2 tablespoons low fat mozzarella cheese, shredded 2 tablespoons low fat sour cream 2 tablespoons cilantro, minced 2 medium whole wheat tortillas
1. Saute onion, garlic, and bell pepper over medium heat in non-stick saucepan sprayed with cooking spray until tender for 5 minutes. Add water as needed to keep from burning. 2. Add tomatoes and black beans and cook another 3 minutes to heat through. 3. Add eggs and stir until eggs are set. 4. Take one tortilla, top half with half the egg mixture and 1 tbs cheese. 5. Microwave on high for 30 seconds to melt cheese. 6. Top with cilantro and sour cream. What’s good for me in this dish?

They also have B6 and folic acid known to reduce your risk of heart diseases. Lycopene in peppers helps with the prevention of cancers of the prostate, cervix, bladder and pancreas.
