1 cup ( 200 g ) rice , washed and soaked for 30 minutes 2 tablespoon ( 30 g ) ghee 1 teaspoon ( 5 g) cumin seeds 2 (100 g ) onions , chopped fine 1 teaspoon ( 5 g ) salt 50 g mint leaves Juice of 1 lemon Garam masala for garnishing 4 cloves 2 cardamom 2.5 cm cinnamon 6 peppercorns 2 bay leaves
Heat ghee in a pressure cooker , add the whole garam masala and cumin seeds and fry for a minute. Add onions and fry four more minutes.
Add the soaked rice and fry for five minutes on low heat. Add salt, two cup water and mint leaves. Pressure cook till one whistle. Switch off the gas. Open the pressure cooker and sprinkle lime juice over. Serve hot with cucumber raita.
Cucumber raita A perfect accompaniment for rich dishes
Serves : 4 Time required : 5 minutes
You will need
750 g cucumbers, grated 500 g thick curd ½ teaspoon salt 2 green chillies, chopped fine 3 spring mint leaves, ground to a paste 5 g coriander leaves, chopped fine ½ teaspoon cumin powder
Drain out excess water from the cucumber. Beat the curd . Add salt, cucumber , green chillies and mint paste. Mix well . Garnish with coriander leaves and cumin powder. Refrigerate till serving time .
