Mint Cucumber Yogurt

Here is one of favorite, low-cal things to have. Take half a cucumber. Peel the skin and dice into small cubes. Add this to some low-fat yogurt. Add a bit of mint powder for taste, and some salt (optional). My husband like it minus the salt. So, try it both ways. It is really quick to make and does taste fantastic during a hunger pang. Try it out.

It's also cheap! I love making this recipe for pot-luck get togethers. You can try this also with fresh, cracked black pepper and crushed garlic and lemon juice. If you are really being frugal -- as suggested in several frugality books - and really watching calories, instead of yogurt, use cider vinegar and a touch of sugar.
