Menu Plan Monday: Changing My Plan Around

This month’s focus in “ Eating Intentionally “* is on “ Respecting Your Fullness “, which means exactly what it sounds like it means. How are you doing with respecting your fullness?  I think I’m finally getting somewhere with this one! It makes such a huge difference when you pay attention while you’re eating.

I’m having to change up my usual menu plan around a bit, because we are rearranging our schedule. I used to do slow-cooker meals on Mondays, with something made from the leftovers on Tuesdays. But now, due to some schedule changes we made, my DH is going to be largely responsible for getting dinner on the table on Tuesdays while I’m giving piano lessons. So Tuesdays will be the new slow-cooker day to make it easy on him, and Monday will be a quick meal day, since we’ll have to eat earlier (around 4:30).



  • Leftovers
  • Mixed Greens Salad
  • Beans


  • Hamburgers, Homemade French Fries
  • Slow Cooker Pork Ribs, Steamed Carrots, Buttered Noodles
  • Baked Quinoa and Oatmeal , Bacon, Fruit
  • Sausage Alfredo Pizza, Sliced Apples
  • ?? Going shopping this week, we’ll see what happens!


  • Nuts, Raisins, Cranberries
  • Gonna make somethin’

In My Kitchen Today

  • 1-2-3 Granola
  • Coconut Milk
  • Coconut Yogurt

*My concept of “Eating Intentionally”, and the 10 principles we are working through this year, come from the book “ Intuitive Eating ” by Evelyn Tribole and Elyse Resch. I highly recommend it – I don’t agree with everything in it, but it is a great read for anybody who has ever been on a diet and/or is considering going on a diet.
