It’s once again time for Menu Plan Monday! Ahhh… my refrigerator and pantry are full once again! Well, almost. A quick trip to the Walmart Supercenter will round out my OAMS extravaganza and we’ll be fat and flush with food for a while.
I scored a free turkey breast this week, by the way! It wasn’t supposed to be free; it was supposed to be on sale for $1.37/lb at Harris Teeter. The one I picked up, though, wasn’t marked with the correct sale price, so it rang up at the regular price, which I didn’t realize until I got home. Since the price difference was significant, I went back to Harris Teeter; and they were very apologetic and refunded the full amount of my turkey breast! Gotta love good customer service like that! So guess what’s on the menu this week!?
I also still have the majority of meat left on a cooked chicken, which I never got around to cooking into chicken and dumplings. I’m going to store it in the freezer until this weekend, when I’ll pull it back out to make sandwich fillings for a picnic with friends.

I try to incorporate one new recipe a week into my menu. This isn’t really difficult for me since I rarely make the same thing twice.
Herb Roasted Turkey Breast - I don’t make turkey breast very often, so I’m looking forward to trying this recipe in the slow cooker.
