Meatball & Goat Cheese Bake

Can I just say that I'm BEYOND happy today is Friday? Is it me, or did this week go by super slow?

Maybe, I was spoiled with those two days off last week.

Or maybe, I'm super excited about what I have going on this weekend! My agenda consists of dinner dates to catch up with friends, a baby shower for Darci, Christmas shopping, a birthday outing AND the LSU game.  Am I off yet?

When I was doing my daily blog reading yesterday, I saw that my friend Brittany over at Itty Bits of Balance is doing a little thing called "25 Days of Thanks". I was touched by what she had to say, and immediately decided to participate.

I had already posted yesterday when I came across the "25 Days of Thanks", so I took to twitter instead:

 DAY 1: I'm thankful for my parents.

 

Today, DAY 2: I am thankful for, you guessed it, little Sydney.

This dog makes me so stinking happy. I love this little fluffball to death!

Speaking of yesterday, some of y'all may have read that my planned meal for dinner last night was a Meatball & Goat Cheese Bake. Let's just say it turned out so phenomenal that it will be my lunch again today. Seriously.

Today's meals:

Breakfast: Pumpkin Protein Oats (1/2 c oats, 1/2 scoop protein 1/3 c pumpkin) topped with 1 tbsp almond butter

Snack: Banana & strawberries

Lunch: Meatball & Goat Cheese Bake

Snack: Grapes and seaweed snacks

Dinner: With Friends! Since I plan to "behave" myself all day, I won't have to give dinner much of a thought.

Ok, now back to the Meatball & Goat Cheese Bake. Y'all, I really surprised myself with this one. I mean, I had a feeling it would be good - let's be real, with meatballs, marinara and goat cheese, how could it not be?

I didn't realize, though, that it would be flipping AHHH-MAZ-ING!
