Love those creamy, fluffy mashed potatoes, with some good ol' gravy? MMM. Me too. Try this alternative. It's healthier, and tastes really good. Make mashed cauliflower instead! Cook it the same way you would mashed potatoes. Steam or boil the cauliflower until soft. Mash it, or use a mixer to blend it until desired consistency, then add milk, butter, garlic powder (I especially like garlic in it), whatever you would usually add to mashed potatoes. Enjoy!
That's so funny that you posted that, cause this is one of the ways that you can trick your family into eating a veggie. Thanks to the consistency, it will take quite a while for them to figure out they're not eating their typical mashed potatoes. If you don't want to totally con them, make a half and half mix. Always a hit!
potatoes are fine, but "traditional" mashed potatoes are loaded with fat and calories from all the butter, cream, etc. So, we have healthy recipes for mashed potatoes too, but Kim's lima bean recipe above offers an alternative... and lima beans have a little more nutrients and less calories, which is ideal for (your goal is to get those most nutrients in the fewest calories vs. nigh calorie foods with little nutritional value).
