Marbleized Angel Food Cake with Warm Cocoa Sauce
( A cake with a sprinkling of raisins and walnuts, seasoned with cocoa sauce )

Serves: 12
Time Required: 20 minutes plus baking time


12 egg whites
8 ml cream of tartar
300 g sugar
200 g flour
3 g salt
5 ml vanilla essence
8 ml lemon juice
35 g sieved cocoa powder
50 g raisins
50 g walnuts, chopped

For the Cocoa Sauce:

60 g cocoa powder
150 ml water
100 g sugar

For the Cake:

Preheat the oven to 350 * C or 180 * C.

Whip the egg whites till medium frothy. Add cream of tartar while whipping and add the sugar gradually. Whip till the mixture forms stiff peaks.

Fold in the flour, salt, vanilla essence and lemon juice.

Place half the batter in a separate bowl and fold in the cocoa powder, walnuts and raisins. gently combine the two batter till you achieve a marbled effect.

Pour into a greased and floured baking dish. Tap the dish firmly on the counter top to dissipate air bubbles.

Bake in the oven at 350 * F or 180 * C for 30 minutes, or till a skewer inserted in the centre comes out clean.

Remove from the oven and allow to cool. Run a knife round inside of the pan to loosen the cake, and then invert the pan and turn the cake out onto a wire rack. Set aside.

To prepare the cocoa sauce:

Whisk the cocoa powder and 50 ml of the water together to form a paste. Boil together the sugar and water and stir in the cocoa paste.

Reduce heat and simmer for 15 minutes, or till the mixture coats the back of the spoon.

Serve cake with the sauce. The sauce can be reheated in the microwave if necessary.
