Maple Pecan Cookies and Pumpkin Pie Oats!

Hello everyone!

This morning started off like any other- I woke up at 7:30! a lot nicer than the usual 6:30… As much as sleeping in rocks… I can never sleep in late on weekends! I always have so much work and I LOVE to get it all done in the morning so I have the afternoon to reeeeelllaxx!

Today I decided to make some PUMPKIN PIE OATS! Boy, these were delicious- all I did was mix the oats and water with about 1/2 cup pumpkin, some cloves and nutmeg and popped it in the microwave! THIS stuff tastes JUST like the real deal- you must try it!

topped with 1tbsp flax, 1 fig, 2 dates, cinnamon and SF maple syrup~YUMMY! OH, but the best part was THIS!!!! I cannot get it over here, but I’ve seen it all over blogworld and specially ordered it- its NATURALLY MORE!

the verdict- THIS STUFF IS KICK ASS! I’m not kidding you. If I had to compare it to another kind I would say it has the consistency and sweetness of Skippy BUT it has all natural ingredients including cane sugar, honey, flaxseed and egg whites! Check out the stats:

There are even little flaxseeds mixed in with the peanut butter! Anyways- to sum it all up this stuff has a smooth yet grainy texture, its nice and sweet and it tastes so pure and natural! (I guess that’s why they call it Naturally More) And I truly did want more!

Ok, enough about my peanut butter rant… after my delicious breakki I worked… and worked…. until about noon when I felt my energy drop. I wasn’t that hungry, but I could feel my body lagging and I hate waiting until I’m ravenous to eat.. so I made a BIG veggie plate with two laughing cow wedges. My veggie fest included: grilled brussel sprouts (le duh!), cherry tomatoes, grlled mushrooms, peppers and asparagus, lettuce, carrots, broiled broccoli AND a satsuma! I whipped up my favorite veggie topping (light mayo and mustard- microwave for 20 seconds) and sprinkled the whole plate off with some ground white pepper!

The satsuma really satisfied the sweet tooth!

My afternoon consisted of absolutely nothing~and I LOVED it. I watched some tv, read some blogs and took my dog on a nice long walk! The air was so cool, crisp and fresh today…and it DIDN’T rain!!!! Success!

After my walk (or well my dog’s walk- I always use my dog as an excuse for ME to go on a walk) anyways I had a little snacky- some more frozen yogurt… I don’t always have yogurt for afternoon snacks- I promise! I took one of these frozen babies and topped it with SF maple syrup and cinnamon- it tasted so decadent!

….And then the boredom bug kicked in.. and what do I always do when I’m bored? BAKE! I’m really not too into baked goods but I love making them for friends and family!  I decided to make MAPLE PECAN COOKIES!

Here’s what went in the whole batch:

3/4cup butter
1 1/4 cup sugar
1 egg
1 egg yolk
1 teaspoon Maple extract (vanilla will do)
1/4 teaspoon salt
2 1/2 cups flour
Pecans (one per cookie)
multiple drizzles of Maple Syrup

First I creamed the butter and sugar:

Then I added the egg, egg yolk, maple extract and salt.

Mixed that all together then added the flour.. formed into little balls and placed on a cookie sheet!

Then I used one pecan per cookie and made a little niche in each cookie…then I put a little drizzle of maple syrup in the niche like so:

And then covered the niche with a pecan! Here’s what the batch looked like before puttin’ ‘em in the oven:

Then pop them in the oven at 375degrees for about 10-12 minutes… then you will have this beauty:

nom, nom, nom….. ENJOY!
