Maple Oaties (Gluten-free & Dairy Free)

Is there such a thing as a cookie being healthy, nutritious and delicious? Yes! These are guilt-free and good-for-you cookies. The recipe is simple, but let me warn you of one thing…this cookie dough is addicting!!! There may be a small chance these cookies will never make it into your oven!

This recipe boasts a simple ingredient list of…oatmeal, nuts, peanut or almond butter, cinnamon, mini-chocolate chips or dried fruit, unsweetened coconut (opt.), salt and vanilla.

Combine all ingredients and refrigerate for 15 minutes. I used a mixture of my homemade peanut and almond butters. Scoop dough onto Silpat lined cookie sheet, pressing firm to keep the dough from coming apart.

Bake at 325 for 10-12 minutes. Cool on rack.

This cookie may not win the “prettiest cookie on the block” award, but this is a nutritious and delicious cookie! This could even be sufficient for a quick breakfast on the run!

1 c. old-fashioned oats
1/2 c. peanut or almond butter
1/3 c. maple syrup, agave or honey
1/2 c. unsweetened shredded coconut
1/2 c. chopped nuts (I used pecans)
1/2 t. salt
1/4 c. mini chocolate chips or dried fruit
1 t. vanilla
1 t. cinnamon
