Make Your Own Veggie Soup

Whenever I'm trying to lose weight the first thing I do is cook up a batch of vegetable soup. With soup you get the satisfaction of eating comfort food without all the calories. Plus, it takes a while to eat a hot bowl of soup! You can trick yourself that you're eating more. Canned soups are full of sodium so you want to make your own from scratch. The good news is that it's easy and cheap. All you need is fresh veggies, a big pot, and a good chopping knife. This is what I put in mine:

* Cabbage

* Cauliflower

* Broccoli

* Carrots

* Turnip - I know, but it adds a really good flavor - trust me!

* Celery

That should get you started. If there's something you don't like, leave it out. Use your imagination. There's no measuring. You just get all your veggies and chop them into small pieces about - inch squared. You can even use the tough stalks because they?ll soften as they cook. Fill your pot about halfway with the veggies then up to the top with water and boil for about an hour. You can add a little salt - it won?t be nearly as much as what's in a can of soup. Once the vegetables are soft I add the following:

* 1 can stewed tomatoes

* 1 can garbonzo beans

* 1 can kidney beans

* 1 can corn

Again, if you don't like it, leave it out. I like the beans in there to add some substance and a little protein. Once you've got this great pot of soup, you can dish some out whenever you get hungry! Don't worry about making too much because it freezes really well in plastic containers. Just let it cool first. One pot of soup is plenty to get you through those first couple weeks of a diet. Plus, it's just a good thing to have on hand for when you want a little something. You can also add a light sandwich and call it a meal. Did I mention a bowl of one or one and a half cups is only 1 Weight Watchers point? Enjoy!
