I have a short post for you today….. with some eats from yesterday and this morning as well as a little look into my must have foods- as requested by a reader!
So today was a rest day for me! I usually take 2 days off during the week and spread well apart… Sundays and Thursdays or Mondays and Fridays.. you get the jist!!- but I might do a little light stretching this afternoon to limber up a bit!
Okay.. let’s look into yesterday’s eats!
Note to EVERYONE: COOK YOUR RICE IN VEGGIE BROTH- the flavor is BEYOND belief!
I also just cooked up some kidney beans in cumin, chili powder and garlic powder to enhance the wonderful flavvaahs!
I tried to make Stefanie’ s peanut flour dip, but I put WAY too much soy milk in- and then it started exploding and dripping out of my processor!! Such a shame.. but I am definitely going to have a RE-MATCH.. and if you haven’t checked her dip out DO IT- it looks AMAZING!

Okay… so since this post has been boring so far…EXCEPT there is nothing boring about SOME GOOD FOOD.. right?
I decided that in the spirit of Morgan’s Vegan for a Week Challenge … I would share with you guys my pantry and fridge staples!! The things I always like to have on hand! So if you’re up for her challenge.. here are some goods to keep with you!
Beans: kidney, chickpeas, black beans, pinto, lentils, adzuki, black eyed peas (whatever takes your fancy!
Soy: Tofu, soy milk- and if you can find them then tempeh and seitan!
Grains: quinoa, millet, brown rice, spelt pasta or WW, WW bread, oats
Starchy veg: parsnip, sweet potato
Nuts and nutbutters: same as above and nut butters I have 10 JARs.. let’s not get into all of it!
Oils: grapeseed, groundnut, flaxseed oil
Misc….Avocados, ground flax
Fruit: kiwi, mango, apples, berries, pears, plums, melon (I LOVE FRUIT)
Veg: brussel sprouts, broccoli (CALCIUM!), spinach, carrots, tomatos, bell peppers
Hummus, fruit preserves, vegan protein powder, nutritional yeast, homemade larabar type things, PICKLES
Those are the main things I can think of at the moment!!.. I hope you take on the challenge .. I know Morgan is working SUPER DUPER hard on creating posts for Vegan week, so your support would be AWESOME!!
I can tell you from experience that since becoming vegan I feel so VIBRANT and ALIVE… It feels amazing to be doing good to my body as well as the environment and animals on this Earth!
A vegan diet is definitely a diet heavy on fats and carbs-…..so just be aware of that as protein used to be my MAIN MAN and now it has switched to love and cuddles with complex carbs and healthy fats!
