Low Calorie Kerala Chicken Cutlet

Serves : 3
Makes: 7

Ingredients

100 g boneless chicken, boiled and minced
3 potatoes, boiled and mashed
2 teaspoon oil
2 onions, finely sliced
1 bread slice ( whole wheat / brown bread ), cut into small pieces
1 small green chilli, finely chopped
1 spring curry leaves
1/2 - inch ginger, finely chopped
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon garammasala powder ( Melam / Eastern / Ann’s )
1/2 teaspoon salt ( or to taste )
1/4 cup maida ( all purpose flour )
1/4 teaspoon salt ( for maida )
2 tablespoon water for diluting maida
1 cup breadcrumbs
2 tablespoon cooking oil ( for frying cutlets )


First 3 stages of making cutlet - Potato - Chicken mixture, dipped in diluted flour and rolled with breadcrumbs

Method

Dilute maida / flour with water, salt and make a smooth batter. Keep aside.

Mix together boiled chicken and potatoes. Keep aside.

Heat oil in a non stick frying pan. Fry sliced onions till golden brown. Add curry leaves, chopped ginger, green chilli, red chilli powder, turmeric powder and coriander powder. Saute on a low heat for 3 - 4 minutes. Add boiled and mashed chicken and potatoes. Stir well. Add bread slice, garammasala powder and salt to taste. Mix all the ingredients together. Do not add water. Cover with a lid and cook on a low heat for 8 -10 minutes. Let it cool for 10 minutes.

Make cutlets with potato - chicken mixture. Dip each cutlet into diluted flour and roll with breadcrumbs.

Heat 2 tablespoon oil in a non stick frying pan. Arrange cutlets carefully and cook on a medium heat till both the sides turn golden color. Serve hot with tea /coffee.
