Both my wife and I are in very demainding jobs and have little time to cook. We end up eating out too often as a result. I am looking for recipes for vegetarian meals that are quick and easy to make (no more than 15 minutes), tasty and nutritious. Any suggestions?
Lots of ideas. So, I'm in the same boat...vegetarian, burned out at the end of the day, and needing a quick, healthy meal to throw together. You can check out my profile to see my complete list of suggestions, but as a quick answer to your question: my favorite weeknight meal is rice with a Tasty Bite Indian meal. You can buy them at most health food stores, I usually get them at Berkeley Bowl. They cost about 4 bucks a pop, serve two, and are boil in packet meals. They take less than ten mins (not including the rice). There is a huge selection, but I haven't tried one that I didn't like yet, although the lentil ones tend to be my least favorite...try the agras peas, or the jaipur (spelling?) vegetables. MmMm.
Veggie Delight!. One of my favorite vegetarian treats involves minimal prep time. The most time that you're going to spend making it involves going to the store and picking up the ingredients, as well as slicing apples.
You will need...
Snap peas or snow peas
Mushrooms - get em pre-cut, why not?
slice up one apple into small chunks.
Turn on a fry pan, throw in the Edamame. Let it cook for a minute, then add your vegetables and peanuts, put a lid over the pan for 3 minutes. Sprinkle concoction with light salt or seasoning. Add your apples. Let cook for one more minute. Voila!
