Baked lobsters with a spicy filling Serves 4 Time required; 45 minutes plus marinating time
You will need
4 ( 1.2 kg ) lobsters, washed and de veined Salt and lime juice to taste Cooking oil 4 ( 200 g ) onions, chopped fine 2 ( 150 g ) tomatoes, chopped 1 bunch coriander leaves, chopped 50 g cheese , grated
For the periperimasala
6 red chillies A small piece of ginger 10 flakes ( 20 g ) garlic A pinch of cumin seeds A pinch of turmeric powder 3 cloves 5 cm cinnamon 3 teaspoon 9 15 ml ) vinegar
Method
Grind all the ingredients for the PeriPerimasala with vinegar to a fine paste. Keep aside.
Scoop out meat from the lobster shells and keep aside. Boil the lobster shells till done and keep aside. Marinate the lobster meat with salt, lime juice and little of the ground PeriPerimasala.
Heat oil and fry the chopped onion till golden brown. Add the finely chopped tomato and sauté till the oil floats on top. Add lobster meat and sauté for three minutes. Add the remaining PeriPerimasala and fry till the oil floats on the top. Remove from the heat. Mix in the chopped coriander leaves.
Put the filling in the lobster shells. Sprinkle grated cheese on top and bake till it melts. Servewith green salad .
