I think this is lunch #3 in a row featuring a big salad - and I know I’ll be having another one tomorrow! I could probably have a big salad everyday for the rest of my life and be happy - I love big bowls of tons of different flavors (and I’m sure I didn’t need to remind you of that
)

I took my Psych test this morning, which left me just about 45 minutes to exercise before I had to shower and get moving to lunch. So I decided to just hit the pavement for a quick run instead of going the gym. Suited me fine since it’s another warm day! I did about 4.5 miles to a nearby neighborhood and back. I was showered, dressed, makeuped with dry hair in about 20 minutes and decided I’d better have something in my stomach since I had an hour until I was actually meeting my friend for lunch (I had to make a stop at another friend’s house for a textbook first, and the drive was about 20 minutes). So I had some trail mix - and a second handful of blueberries!

The One and Only!

I met Brittany for lunch at Salad Creations, which I had never been to before. It was kind of like Subway for salads. You go through a line and tell them what toppings you want and design your own salad. My kinda place! They had 40 toppings and I think I got one of each (minus onions!)

Here’s what mine had (thankfully he only gave me a small amount of each, so it really wasn’t as much as it seems)
- Romaine + Spinach
- Sprouts
- Black Olives
- Broccoli
- Carrots
- Chickpeas (~1/4 cup?)
- Corn
- Peas
- Cucumbers
- Gorgonzola
- Green Bell Peppers
- Hard-Boiled Egg (1 whole)
- Mandarin Oranges
- Mushrooms
- Raisins (~ tbsp?)
- Sliced Almonds (~1 tbsp?)
- Tomatoes
- Creamy Cucumber Wasabi dressing, on the side (I had about 2 tsp?)

I ate The.Whole.Thing.
I think I impressed Brittany! Actually, I wasn’t even that full. But I was perfectly satisfied.
It was SO TEMPTING to go shopping after lunch. We were in a shopping center with all kinds of fun stores - include Bath & Body Works and Homegoods. But I resisted, knowing I have lots of studying to do
My wallet is very happy at the moment.
I’m sipping a POM spritzer now and am about to stick my nose in some textbooks. Perhaps on the patio!
