I lifted this recipe from AllRecipes.com. While it's a great recipe as is, I would improve on it by tossing everything into a crock pot and letting it sit on low all day. To make it more festive, serve it in a bread bowl and add some sprinkles like parmesan cheese and fresh chopped herbs. If you use powdered broth powder or boullion cubes, the whole soup should cost you under $3. At 8 servings that's less than 40 cents each - and much healthier than a cheeseburger!
2 cups dry lentils
2 quarts chicken broth
1 onion, diced
1/4 cup tomato paste
2 cloves garlic, minced
1 tablespoon ground cumin
In a large saucepan combine lentils, broth, onion, tomato paste, garlic and cumin. Bring to a boil, then reduce heat, cover and simmer until lentils are soft, 30 to 45 minutes. Serve with a squeeze of lemon.
