One of my favourite magazines is definitely Delicious : it is always full of beautiful, but easy to follow recipes and I tend to try quite a few of them before the next issue is out. The new Italian issue is out now so of course I had to jump in and cook one of the recipes. I knew I couldn't go wrong with this chicken because it has everything I love: lemon and rosemary! Deliciously moist and full of flavour!
Lemon & rosemary chicken
2 chicken breasts (about 500g) 1/4 tsp chilli flakes 2 tbs olive oil 1 garlic clove, finely chopped 2 rosemary sprigs grated zest and juice of 1 large lemon
Place the chicken in a dish with chilli, olive oil, garlic, rosemary, lemon juice and half of the zest. Leave to marinade for about 10 minutes. Heat a frying pan or a grill over medium heat, add chicken and rest of the marinade and cook for a few minutes on each side until done. Serve with rest of the lemon zest and some rice.
