Lemon-Parsley Rice

From "Cooking Without a Grain of Salt."

2 cups boiling water
1 cup white rice
1/4 cup vegetable oil
3 tablespoons fresh parsley, minced
1 tablespoon lemon juice

Cook rice in boiling water over low heat for 15-17 minutes or until rice is done (has absorbed all the liquid). Mix remaining ingredients and pour over hot cooked rice. Makes 4 servings.
