Lauki Stuffed with Mince

You can use either mutton or chicken mince for the stuffing. For vegetarians, soy granules work out.

Start to finish: 1 hour
Serves: 4

2 small lauki ( about 8 - inches long )
250 g mutton / chicken / soy mince
3 tablespoon vegetable oil
2 onions, finely chopped
4 garlic cloves, finely chopped
2 ripe tomatoes, chopped
1 tablespoon chilli sauce
1 tablespoon ketchup
2 teaspoon dried oregano
2 teaspoon butter, cut in small pieces
1 cup breadcrumbs , mixed with 2 teaspoon butter

Heat oil in a pan, add the onions and fry until translucent. Add the garlic and fry some time.

Add the ground meat / soy granules. Brown the meat / soy and add the tomatoes, chilli sauce, ketchup, oregano and cook well. Set aside to cool.

Split lauki lengthwise; scoop out centres and chop the pulp finely. Mix the chopped lauki with the meat mixture.

Stuff the lauki skins with the minced meat mixture.

Dot each lauki with a little butter and sprinkle with breadcrumb mix. put lauki halves in a baking dish with about 1/2 cup water. Bake at 200 * C for 30 minutes, or until golden brown.
