1 3-4 pound frying chicken, cut into small pieces (I used boneless skinless chicken tenders)
1/2 cup Key Lime juice
1/3 cup soy sauce (I used wheat free)
4 garlic cloves, finely chopped (I used minced Organic garlic from SpiceWorld)
4 T. olive oil
2 white onions, diced (I used dried onions)
Salt and coarsely cracked black pepper to taste.
Wash the chicken pieces in cold water, dry with paper towels, then rub skin with 1 garlic clove. Mix together the Key Lime juice, soy sauce and the remaining garlic cloves. (I put all together in a bowl and put the chicken tenders in) Marinate refrigerated overnight, or at least 8 hours.
Heat a 10-12" frying pan, and when heated add the olive oil. When oil begins to smell fragrant add the chicken pieces. Season well with salt and pepper. Brown on both sides over high heat, turning several times. When browned reduce heat, then add onions and remaining marinade. Bring to a boil, cover and simmer for about an hour, or until done. (I baked the chicken at 350 degrees for about 25 mins, or till done)
