Is extra virgin olive oil and balsamic vinegar mix remained trans free or non-hyrdrogenation after shakes? See details.

I made a salad dressing with extra virgin olive oil, balsamic vinegar, and a package of mix and there were two parts of liquid first few days.  Two weeks later it became a thick liquid and there was no a separated layer.  Pouring was clogged and it was like thick syrup.  Did it become hydrogenation and bad for health?  Thank you for answer.
