Indian Chicken Salad

This is one version of an Indian Chicken Salad - you can add raisins and toasted almonds as well for extra flavour!

Marinated chicken breast - 2 tablespoons of Patak's Chicken Tikka Paste with 200g skim natural yoghurt - coat about 600g chicken tenderloins or breasts with this and BBQ. Whilst still warm put together a salad of
- spinach
-semi dried tomatoes
-Spanish onion
-diced mango
Top with 100-120g warm chicken breast, shredded or chopped.
Dress with a dollop of skimmed Natural Set yoghurt. With the mango and semi drieds it should be moist enough not to need a dressing as such. You can also add chopped garlic to the yoghurt. I also added coriander leaves to the top but took this photo too soon!
