I Told You So…

As I mentioned earlier… I LOVE oats and I warned you all that they would be appearing quite frequently. Well, here is my first post of eats and guess what? OATS are first up! I mean c’mon, what other way can one start the day than with a big bowl of warm eggy porridge?

I woke up early this morning, put on my sweats and slippers and made my way downstairs to create this beauty…

YUM…

To make this incredible bowl I simply combined:

1/3 cup porridge oats

1 cup water

1 tsp vanilla extract

2 egg whites

(microwave for 2 minutes)

and now on to the best part…. THE TOPPINGS!

1 tbsp Cashew butter

1 fig

1 prune, 1 date

1tbsp ground flax seed

Cinnamon and a drizzle of agave to round it all off…

Much later on I had a light lunch because I was planning on going on a run afterwards.. it consisted of a big plate of grilled veggies (bell peppers, BRUSSEL sprouts (DUH), carrots, tomatoes, green beans) and two laughing cow wedges… it hit the spot, but I don’t have a picture because it was not very cute…

My run was going so well.. I had my music pumping, the fresh air against my face and I was just jammin along UNTIL the skies completely opened up. It DOWNPOURED. Now,  I’m not talking some light drizzle.. I’m talking RAIN.. by the time I got home it literally looked like I had just taken a shower…… with all my clothes on. However the rain was somewhat refreshing and I secretly enjoyed it..

I then got to class and did class stuff and by the time I came home I was ready for some munchin’. I ate a yogurt, which I had frozen last week.  I popped it in the microwave for 40 seconds and topped it with some cinnamon, obviously… and voila! healthy, cheap frozen yogurt!

For my dinner I was in a veggie mood again.. (I’ve trained my body to tolerate EXCESSIVE amounts of vegetables.. so it’s all good)

My plate consisted of brussel sprouts (of course), asparagus, tomatoes, carrots and two laughing cow wedges.. I made a little gloppy dressing of mustard and light mayo microwaved for 20 seconds… Its delicious! Its creamy and tasty and low-cal too! Alongside my veggie feast I had some pineapple cottage cheese. I added some white ground pepper (on the veggies too) and some onion granules. I know, weird.. onion on pineapple cottage cheese? IT IS THE BOMB. Actually onion granules on anything is amazing! It adds an extra kick to any dish!

And my cottage cheese (It looks nasty, but of course it was delish!)

Naturally, I had to end on a sweet note so I enjoyed some puffed rice with a chopped apple, Dark Chocolate Dreams, cinnamon and agave! (and YES, that is a heart-shaped bowl with Mini-Mouses’s face on the bottom- unfortunately her face is being bombarded with rice puffs :(
