Hubbies Cook Too - Garlic, Rosemary, Ranch Chicken

To my delight, Hubbies Cook Too came back this week:) Oh, I sure was happy. A few days ago, my neighbor brought me a 4 pound chicken, fresh from a local farm. I was anxious to try farm fresh chicken and convinced hubby it was time for him to get cooking again. Hubby came up with Garlic, Rosemary, Ranch Chicken with spanish rice and broccoli. It was very simple to make, but the cleanup wasn't too fun (my job). Here is the recipe, but I must disclose that the amounts are estimated, hubby does not measure.
1 whole chicken (we used a 4 pound one) 3 Tbsp butter softened 1 Tbsp Rosemary 4 cloves garlic chopped 1 Tbsp ranch powder dash of salt
Preheat oven to 425. Wash chicken and pat dry. Take butter and all seasonings and mix together. Stuff butter mixture under the skin of the breast, thigh, and leg. Rub the rest of the mixture around the outside.
Bake for 60 minutes.
Carve the chicken.
Serve with your choice of sides. Hubby chose Spanish rice and steamed broccoli.
