Sev Khamni is traditional Gujarati break fast. It can be served as farsan also. This recipe is none fried version of Indian snacks.
Ingredients to make Sev Khamni:
Chana dal (gram dal) – 200 gram
Salt to taste
Citric acid – 1 tea spoon
Crushed green chilies – 1 table spoon
Crushed ginger – 1 tea spoon
Crushed garlic – 1 table spoon
Sugar – 4 tea spoon
Asafoetida (hing) – ¼ tea spoon
Turmeric powder – a pinch
Oil – 6 table spoon
Mustard seeds – 1 tea spoon
Raisins – 10- 15
Green chilly – 1
Water – ¾ cup
Crushed khaman – ½ cup
Coriander – ¼ cup
Green chilly – 3 to 4
Sugar – 1 tea spoon
Method to make Sev Khamni:
Soak gram dal for 6 – 7 hours in water. After soaking process is over crush it with least water, add green chili pest, ginger- garlic pest salt, 3 tea spoon sugar, turmeric powder, a pinch hing and citric acid while crushing.
Beat for at least 5 minutes continuously. Pour the mixture in a greased plate and cook on steam for 10 – 15 minutes.
Let it cool at room temperature for 2 – 3 hours.
Crush it by hand.
In a pan add 5 table spoons of oil and add mustard seed, while seeds crackles add chopped green chilly, hing, raisins and water, while water is boiling add 1 tea spoon sugar and mix well.
Now add crushed mixture in it and mix well.Transfer hot Sev Khamni in a serving bowl and garnish with, Pomegranate, coriander and nylon sev.
For making chutney crush all the material avoiding crushed khaman. While chutney is ready, mix it with crushed khaman and serve with Sev Khamni.
