I always buy organic, unsweetened coconut. And I found some the other day that has been in the back of my fridge for a little while. It looks and smells great, but is there a time you should throw it out regardless of what it looks like?
From what I know coconut is full of saturated fatty acids (which are good for us! check Sally Fallon's Nourishing Traditions), these are highly stable and it means it doesn't go rancid easily even if exposed to heat and air like most vegetable oils. So I say just trust your feelings - coconut shreds must be still good if kept refrigerated.
