Herbed Whole Wheat Bread

After having been away from the blog for a bit writing papers like a mad woman, I am excited to have several recipes to share in the near future... Our thanksgiving menu has always been more of a cross-cultural fusion assortment than a traditional thanksgiving feast. I am quite proud of the lovely vegetarian array we concocted this year, starting with this hearty bread...

Herbed Whole Wheat Bread

3 3/4 cups King Arthur Unbleached All Purpose Flour
3 tablespoons sugar
1 1/2 teaspoons salt
1 cup lukewarm water1/3 cup lukewarm soymilk3 tablespoons butter, melted1 1/2 teaspoons active dry yeastStir together the dry ingredients, and set aside.
Mix together the water, soymilk, and melted butter.
Sprinkle the yeast over the top of the wet ingredients.
When the yeast begins to foam, fold the wet ingredients into the dry.
Knead until a smooth dough forms.
Place into an oiled bowl and cover with a damp towel, then set in a warm place to rise until doubled in size.
Preheat the oven to 350 degrees, and coat a loaf pan with cooking spray.
Punch the dough down, and turn into the loaf pan.
Bake for 1 hour - until a golden crust forms.
Cool before slicing, and serve with any topping you fancy!
