Herb Crusted Soy Schnitzels - healthy meat alternative

Oh, what a busy day I had yesterday. It was for the first time in my life when I didn’t enjoy cooking and all I wanted was to finish and rest in bed. My “not-yet-vegan” boyfriend is going on a trip and I had to cook lots of meals for him. Furthermore, my camera didn’t work right and the lighting was awfully poor because it rained all day (this is why I need a lightning box... NOW!).   

I spent almost my whole day in the kitchen, super-stressed and terribly grumpy. And as a grand finale for the day, I made an amazing raw dessert but took really crappy pictures. Yep, great day yesterday. 
Anyway I will re-make the dessert because it was too delicious and I have to share it with you. 

Oh yes! About the recipe above...well it’s very tasty and it reminds me of my old days when I used to eat chicken schnitzels. In my opinion soy is the best replacement for meat, and combined with dry herbs, it’s absolutely perfect!


 Ingredients:

  • Dry soy schnitzels – I used 2 packages of 100g each (about 20 schnitzels)
  • Dry herbs – oregano, rosemary, thyme, basil, parsley – about half a cup in total
  • 1 cup whole wheat flour
  • ½ tsp sea salt
  • Vegetable oil – as needed

Directions:

Put the dry schnitzels in a pot and add enough water to cover them. Boil them for 25 minutes.

Add the flour, salt and dry herbs in a large plate and mix them all together. 

When the schnitzels are boiled, put them in a strainer and let them cool down for about 10 minutes.

Turn around the soy schnitzels in the flour mix, shake off excessive flour.

Heat vegetable oil in a non stick frying pan.

Fry them at high to medium heat for about 3 minutes until golden brown, turn around the schnitzels frequently. 

Drip the fat on paper towel.
