We left the Heartland three days ago and it was 12 degrees…1600 miles later we arrived in sunny and warm Phoenix! I had packed food for the trip so we didn’t have to stop and eat, since it would have been fast food and I am NOT a fan of fast food. We ate yogurt, granola and pomegranate seeds for breakfast and peanut butter sandwiches and apples for lunch. We munched on this trail mix most of the way down! It is a mixture of dry roasted almonds, unsalted peanuts, raisins, dried cherries, apricots and pomegranate seeds and lots of toasted pumpkin seeds. It is completely addictive!
While my honey oiled our patio furniture, I grocery shopped at Trader Joes. (my all-time favorite grocery store) We have this handy cart which really helps when I have to lug in heavy sack of groceries.
The Arizona sun really dries out our furniture so this is a yearly project. We like to get it done right away so we can put our cushions on…then we are set to relax with our favorite books and a tall glass of iced tea! (and naps in the sun)
We were given a gift card to one of our favorite restaurants and celebrated our safe travels tonight by dining at the Olive and Ivy. I had grilled salmon with fingerling potatoes and roasted beets topped with baby arugula. I have had this dish before and it is always delicious!
My honey ordered the fresh trout special…there was a lot of flavors going on in this dish. He was pleased.
Since I have been up since 4am…I am hitting the sack early tonight! Looking forward to my morning run with the beautiful view of the mountains!
