What to do with all the extra bread from my bread making endeavors... hmmm. On the verge of being wasted (I made a lot of bread!) I had a brainstorm! I had some of Auntie Erin's eggs still (remember... I'm egg picky:)) so why not make french toast?
I hadn't made it in years, mostly because I haven't eaten eggs and the one time I tried to make vegan french toast, I failed miserably :) This one turned out pretty good though!
Thick cut bread, I highly recommend using homemade but crusty bread from the store or your local bread maker will do
1 tsp nutmeg
1 Tablespoon cinnamon
1/4 cup soy milk
Earth balance margarine
Whip together the eggs and milk, then add nutmeg and cinnamon and mix.
Heat your pan and add a little Earth Balance. Slice your bread into 1/2 inch slices.
Soak the bread in your egg mixture; and when I say soak it, soak it. The bread is thick and you don't want dry spots.
Put in pan and let cook on both sides, about 3 minutes on med/high heat, but keep an eye on it. You want it to be toasty crispy!
With four eggs, I ended up with about five pieces of french toast. Up the quantities if you're making lots.
Top with a little more Earth Balance and of course, agave nectar and serve! I gave the boys fruit on the side to add a splash of color.
