Healthy Fruit Loaf, Flour-Less Chocolate Muffins, Berry Fiber Smoothie: Benefiber Brunch

I am very excited to announce my new role as a Benefiber® brand ambassador. Recently, I cooked a great brunch for my friends, using Benefiber® powder. I made Healthy Fruit Loaf, Flour-Less Chocolate Muffins and Berry Fiber Smoothie. The friends loved the food and were surprised when I later told them about our secret ingredient!

Benefiber® is a fiber supplement made of wheat dextrin. It is a natural soluble and gluten-free fiber. It contains less than 20 ppm of gluten and is therefore considered “gluten-free,” based on both the FDA and the Codex Alimentarius Commission’s proposed definition of less than 20 ppm.  Benefiber®  is taste-free, sugar-free, dissolves completely in non-carbonated beverages and soft foods, and won’t thicken. I found  Benefiber®  to be a wonderful, healthy addition to many recipes.


Healthy Fruit Loaf , Vegan

Ingredients:

1 1/2 cups spelt flour

2 tablespoons flaxseed,  ground

1/2 cup coconut palm or brown sugar

1 1/2 teaspoons baking powder

1 pinch sea salt

3/4 cup walnuts

1/3 cup raisins

1/2 cup dried apricots, sliced

1/2 cup prunes, sliced

2 tablespoons unsulphured molasses

3/4 almond milk

3/4 cup melted coconut oil

1/2 tsp cinnamon

Zest of 1/2 orange

3 tablespoons Benefiber® powder

1/4 cup orange juice

Directions:

Preheat the oven to 350 F. Combine all ingredients, but Benefiber® and juice. In a separate cup, combine Benefiber and juice. Pour Benefiber® and juice combo into the batter and mix well. Pour into a lightly oiled loaf pan and bake for 45 minutes.


Flour-less Chocolate Muffins

Flourless Chocolate Muffins

 Ingredients:

1/2 cup water

3 Tablespoons Benefiber®  powder

1/2 cup raw cocoa powder

4 tbsp  flaxseed, graound

1/4 teaspoon baking powder

2 teaspoons vanilla extract

12 prunes, pureed in a blender

2 dark chocolate bars, broken into pieces (At least 80% chocolate)

Preheat the oven to 375 F.  Mix Benefiber® with water.  In a separate bowl, combine flaxseed, cocoa powder and baking powder. Add the Benefiber® mix and all other ingredients. Pour the mixture into the lightly oiled cupcake liners, placed inside a muffin tin and bake for 15-20 min.
