Hungry Girl has had some "Faux" Fried Chicken Recipes out for sometime now, and I was too skeptical to try it at first. Then my friends dad mentioned that, during a visit to a family member in the hospital, the Registered Dietitian brought around "Fried" Chicken that was made using Fiber One Cereal. I told him I had heard of that before and he said- get this...it tasted pretty good! Ok, if you're from the south then you completely understand that there are 2 necessities here: fried chicken and sweet tea-- If a grown southern man says a Fiber One Cereal-coated chicken breast is good, it MUST be good...
So that convinced me- I had to try this concoction! (Not to mention perform a blind test on the bf- who, might I add, did not notice any difference!)

** I coated my chicken in about .5 Tablespoons of Extra Virgin Olive Oil instead of Egg substitute before I covered it with the Fiber One mix. (That will change the nutrition content a little)
