Happy blog birthday to Peace, Love, and Food!

Happy birthday to you. Happy birthday to you. Happy birthday dear Peace, Love, and Food. Happy birthday to you.

Well folks, it is official, this time last year I published my first blog post: The inspiration behind, apple talk, and an applelicious tofu entree. I can’t believe it’s been a full year since I’ve been blogging about food and nutrition. To all my readers, thank you. I couldn’t do it without you. Your comments, positive feedback, and support help to inspire me.

Exciting news to share with you about my blog today – It was recently named one of the Top 25 Up and Coming Nutrition Blogs on Mister Medicine

In honor of my blog turning one (it’s just a lil guy…), I made my first blog recipe to celebrate: Oven-Roasted Tofu with Sauteed Apples courtesy of Whole Foods . The recipe that turned out so well a year ago I decided to continue on with my goal of making new recipes each week and to blog about them!

First, marinate the tofu.

Chop up the veggies. I used my new and improved knive skills thanks to Artepicure cooking school !

Add veggies to the tofu.

Mix it all together to distribute the marinade onto the vegetables. Then pop that baby into the oven!

Meanwhile, saute the apples using canola oil.

Cook the apples until lightly browned but not mushy.

This dish goes well with a side of brown rice! Gotta love them whole grains.

Out of the oven and voila!

Serve the tofu and vegetables with brown rice and sauteed apples. Bon appetit!
