Guest Post: Not So Hard (Boiled Eggs)

Hello all! I am happy to be blogging for Erin – who I am sure is having a great time in Alaska! My name is Anna Shlachter and I am a Registered and Licensed Dietitian and currently work as the Program Manager for the Egg Nutrition Center. I keep busy volunteering for professional organizations and other groups and have wild kingdom at my house. The focus group for my blogs is usually health professionals, but today I promise anyone can use this information.

Do you want an affordable, high quality protein source that has varying amounts of the 13 essential vitamins and minerals? Have an EGG. In case you didn’t know: An egg a day is ok! At 72 calories they are little powerhouses!

Today I wanted to share a recipe for the perfect anytime egg – the hard-boiled egg. The interesting thing is that many people don’t know how to make them properly. Here’s the basic recipe .

1. PLACE eggs in saucepan large enough to hold them in single layer. ADD cold water to cover eggs by 1 inch.
2. HEAT over high heat just to boiling. REMOVE from burner. COVER pan.
3. LET EGGS STAND in hot water about 15 minutes for large eggs (12 minutes for medium eggs; 18 minutes for extra large.
4. DRAIN immediately and serve warm. OR, cool completely under cold running water or in bowl of ice water, then

  • Say NO to green eggs! Don’t cook them for too long or at too high of a temperature.
  •  Peel with ease: Don’t use “fresh” eggs-cook them when they are about 10 days old. They’ll be much easier
  •  Life of an egg: You can store hard-boiled eggs in their original carton for up to 7 days.
