Grilling Eggplants

You don't have to be a vegetarian to enjoy eggplant. Especially grilled eggplant. Slice your eggplant into ½ thick pieces. Put them in a colander and sprinkle with a little salt. Let them stand for 8-10 minutes and rinse and dry them. Mix up ¼ cup each of balsamic vinegar and dry red wine. Stir in 1T brown sugar. Put your eggplant on the grill and use the vinegar mixture to baste the slices. Grill until tender. You can serve it with grilled squash and some apple coleslaw.
