Grilled pineapple and cilantro shrimp – what a season inspired dish!
Sweet pineapple, perfectly seared and caramelized, topped with shrimp, cilantro and a light Teriyaki sauce. Each flavor is meant to be there, and they sing in perfect harmony.
It’s all about the ingredients in this dish – fresh and very high quality. I use jumbo or large shrimp, and big steaks of ripe pineapple to provide a substantial meal.
Served with rice and agave black beans, this begs to be enjoyed outside with good friends and music.
Shrimp is an excellent source of protein, with about 12 grams in each 3 ounce portion. It is very low in saturated fat, has a naturally sweet flavor and is incredibly versatile. Shellfish like shrimp have been praised for supporting brain function, thanks to high amounts of Selenium and Omega-3 fatty acids. Shrimp is also a rich source of Vitamin B12, which contributes to a positive mood and energy.
Pineapple and other tropical fruits like mango, kiwi and papaya are high in food enzymes which aid in digestion and stomach processes. Bromelain, the enzyme that pineapple is particularly rich in, aids the digestion of protein – a perfect reason to eat with shrimp! Pineapple is also thought to be anti-inflammatory, helping in the treatment of mild arthritis, indigestion and other diseases.
