Green Tea Almond Butter

Every now and then I make a nut butter that is an unflattering shade of poo olive. IMG_9472 (1024x683)

This happens when you use green nuts, or seeds… IMG_9433 (1024x683)

…or matcha powder. IMG_9410 (1024x683)

But appearances can be deceivingIMG_9463 (1024x683)

–and all it takes is surrounding this tasty tea-infused treat with some slightly more appealing colors… IMG_9488 (1024x683)

….to entice one to dip their spoon straight into the jar. IMG_9464 (1024x683)

Green Tea Almond Butter

  • 2 cups roasted almonds
  • 1/2 Tbsp. turbinado sugar
  • 1/2 Tbsp. honey powder (or additional sugar)
  • 3/4 tsp. culinary grade matcha powder
  • 3/4 tsp. ginger
  • 1/2 tsp. vanilla extract
  • salt, to taste (if using unsalted almonds)
  1. Process almonds in a food processor until smooth and buttery.
  2. Add remaining ingredients, except salt, and process well.
  3. Salt to taste.
